Eggplant with Thai basil(Pad Makua Yow)


Pad Makua Yow,stir-fried eggplant with Thai basil and chilli pepper.
2-3 servings
Prep Time: 10 minutes
Cook Time: 12 minutes
Ready In: 22 minutes

Ingredients:


1 tablespoon vegetable oil
1/2 cup Thai basil,leaves picked from the stem
1/2 - 1 tablespoon garlic,chopped
1 tablespoon sugar
2 tablespoon fishsauce
1/2 - 1 teaspoon yellow bean sauce
2-3 eggplants (if the eggplants are small,use more than three)
3-4 red chili peppers,lightly pounded

Methods:
  1. Slice the eggplants into irregular shapes for easy turning in the pan.
  2. Chop garlic and lightly pound the red chili peppers.
  3. Heat a pan over high heat.Add vegetable oil,garlic and chili peppers.Stir until the garlic turn golden brown.Add eggpalnt and stir then add a 1/2 cup water and cover the pan with a lid.Keep the lid close until the eggpalnt is cooked.
  4. Add fish sauce,sugar and yellow bean sauce and then stir.Add Thai basil leaves and quickly stir to heat the basil.
  5. Turn off the heat and serve with rice.
  6. Enjoy!
